YP-1000 Nisin is a polypeptide produced by Lactococcus lactis. It consists of 34 amino acids. It is a natural antimicrobial agent and used as a natural food preservative with high efficiency, nontoxic, no harm to human and is free from side effects. Nisin is deemed to be a GRAS (Generally Recognized as Safe) substance in USA , and is assigned to be the number E-234£natural preservative in European Union .

It inhibits strains of the pathogen, such as Clostridium botulinum, Staphylococcus aureus, Streptococcus haemolyticus, Listeria monocytogenes, Bacillus stearothermophilus, Bacillus subtilis, Bacillus coagulans, Bacillus cereus, Bacillus Lichiniformis, Clostridium sporogenes, Clostridium bifermentum, Clostridium perfringens, Clostridium pasteurianum, Clostridium Thermosaccharohyticum, Clostridium tyobutyicum, Streptococcus agalactia, Streptococcus pyogenes, Micrococcus luteus, Lactobacillus breuis, actobacillus bulgaricus, Lactobacillus casei, Lacftobacuillus plantarum, Lzactobacillus buchneri, Leuconostoc mesenteroides, Leuconostoc oenos, Pedococcus acidlactici, Pedococcus damnosus, Pedococcus pentosaceus, Enterococcus spp, ....and so on.
YP-1000 Nisin is also able to inhibit Gram-negative bacteria e.g. Salmonella spp, Escherichia coli, Pseudomonsa spp, Bacteroides spp, Actinobacillus spp, Klebsiella spp.
Safety:
YP-1000 Nisin is a natural preservative for foods. It was approved as a natural food preservative by most major food producing countries as well as with the Food and Agriculture Organization/World Health Organization (FAO/WHO) and the European Union.
It is designated as a GRAS substance in the USA and has specific approval in , among others , EU , Australasia and Macrocosm .
The European Union has assigned Nisin to be the number E234. Elsewhere it may be included on the product label as 'Nisin preservative', 'permitted preservative' or 'natural preservative', depending on local regulations.
