ß- amylase is a kind of enzyme which made from grain through deep layer fermentation and extraction technique. This product is applied widely in beer brewery, maltose syrup, high maltose syrup, super high maltose, crystallized maltose and maltitol and fermentation industry.

2. Features
Ø Function: The enzyme split a-1, 4 glucosides bond from non-reducing end of starch to form maltose, and transfer C1 from a-form to ß-form.
Ø Conditions: optimum temperature is 50-60, optimum pH is 5.5-6.8
Ø Definition of enzyme activity: 1 enzyme activity unit is defined as: the quantity of maltose produced by liquefying 1.1% starch in 1hour at pH 5.5, 60,

3. Application methods and dosage
A: Suggest condition for producing maltose syrup, crystallized maltose
Concentration of substrate: 20-25%
DE of liquid: 3-5%
pH: 5.0-5.8
Temperature and time: 50- 58 48-72h
B: Dosage: suggested dosage of 500,000u/mL is 0.15-0.3L/ton starch under standard operation condition, the dosage will be adjust according reaction time, concentration of solid by pre-trail test. -amylase can also apply with pulullanase to produce super high maltose syrup and crystallized maltose. The enzyme can be applied in scarification tank and stir consistence.

Ø Storage of this biological product should avoid direct exposure to sunshine and wet, mix with poisonous and corrosive substances is forbidden during transportation.
