About Us

Azienda Agraria Hispellum was created through an initiative of the Ciampetti family, who chose to cultivate their ties to the land and its finest product: olive oil.

The farm’s olive trees are located on the hills of Spello, along the road that leads to ancient Collepino Castle, and near the Vallegloria Monastery, which was noted on the 1178 Papal Bull of Alexander III as “noble and rich in which reside from 48 to 50 nuns and sometimes more, they wear the habit of Saint Claire of Assisi, with olives in abundance for about four miles around”, and on which reside trees that are approximately 1000 years old. It is a striking environment, rich in history, fascination and beauty, which inspired the colours and landscapes of Pinturicchio.

Because the Ciampetti family loves the territory and the configuration of the land, they ensure that the terracing of the hills typical of the Spello area is maintained.

The planting surface is 25 hectares, at an altitude between 400 and 500 metres above sea level, facing east, therefore exposed to the best sunlight. The land is rich in red rock and red soil, ideal for the development of this cultivar of extraordinary characteristics, producing an oil rich in antioxidants. The trees are not treated with herbicides or pesticides.
The exclusive cultivar used on our land is ‘moraiolo’ which means ‘of the wall’. The name derives from the introduction of the olive tree in our region by monks from Greece and Constantinople, who cultivated their olive trees in holes in the soil where they had removed the stones to build walls.

The harvesting of the olives is done exclusively by hand, and the oil is obtained through cold extraction, within 6 hours of harvest. The resulting oil is stored in stainless steel tanks in a modified atmosphere (using nitrogen).

We offer a product of excellent quality, thanks to the traditional techniques utilized in all of the phases of production, with the goal of conveying an idea: to share the love of our origins through a natural element such as extra-virgin olive oil, and, in doing so, to love the precious and historic land from whence it comes.
